The current Master Distiller of Hayman's (Christopher Hayman) is the great grandson of James Burrough. Whilst not common in modern times, with their Old Tom gin Hayman's pay homage to the prevalent gin which was enjoyed when their family started creating gin. The generous quantities of botanicals which Hayman's use in their family recipe ensure a bold citrus and juniper pine character. Smooth and delicate it has a subtle but defining sweetness (as is common in Old Tom gins). Their Royal Dock Gin (their Navy Strength Gin), was first supplied to the English Admiralty in 1863. As this is a stronger gin, bottled at 57% it's bracing, yet smooth and bright. Gin always used to be rested in casks during the Gin Palace heyday of the 1800's, and so again Hayman's repeats history and uses old Scotch Whisky barrels to rest their gin in for a period of three weeks. The result of this short (gentle) resting period lifts the botanical flavours in the gin, enhancing the peppery spice notes. The result is a really smooth, well-rounded balanced gin. It has peppery and spicy notes from the dominant botanicals – juniper and coriander – which add to its full-flavoured individuality.
