Sylvius Dutch Dry Gin Created at the Onder de Boompjes Distillery, which has been distilling in Schiedam in the Netherlands since 1658. The name for this gin comes from Dr. Franciscus Sylvius, who it has been said was the first to create gin. He registered his distillate, calling it "Genevre". And so Schiedam's history with Genever (and gin) began. In creating this gin the distillery carefully selected ten different botanicals (juniper berries, angelica root, coriander seeds, lavender, whole lemons, orange zest, cinnamon, star anise, licorice root and caraway seeds. They then use 'ultra' wheat spirit to distil the botanicals - and after a few more processes - create this delicious gin. On the nose there are distinct aromas of the caraway along with cinnamon, a little lavender and just a hint of fresh lemon. On the palate the caraway also comes through initially, but this isnt all. This is a complex blend of balanced botanicals. Delicate floral notes join with piney juniper on the mid palate. The spice continues through into the finish, where the caraway comes back and is joined bit a delicate sweetness from licorice, and a touch of fennel. Perfect Serve We love this in a Negroni, as the flavours blend perfectly - however it also makes a delicious and intruiging gin & tonic.  Take a large glass filled with ice and add 50ml of the gin. Gently pour over 150 - 200ml of tonic (we like Fentimans Connoisseurs Tonic here - but their Valencian Orange works too), and stir gently. Garnish with a few juniper berries and a slice of orange.

Midnight London Dry Gin Located in Croatia, just a few kilometres from the sea, Imagine Spirits is nestled between the picturesque cities of Vrsar and Rovinj in Istria. Surrounded by olive trees and vineyards, the distillery has been built with the highest eco-standards, and for their distillation process they utilise solar energy for the majority of their needs. With their Midnight Gin, Imagine Spirits have created a gin which blends together two seperate, and distinct distillations. Each of these has 12 botanicals, one represents the day whilst the other represents the night. They Do not use any artificial colourings or sweeteners at any stage of its production, and where possible use locally sourced and organic botanicals. The Juniper they use is also Croatian, which is considered one of the best in the world and is used in gin production all over the world. The first distillation, the day, is gentle with floral notes. Its creation uses Juniper Berries, Coriander Seeds, Angelica Root, Orris Root, Cubeb Pepper, Grains of Paradise, Monk's Pepper, Bitter Orange Flowers, Grapefruit, Lemon Peel, Lavender Flowers and almonds. The second distillation, the night, is more exotic, with spice notes which evoke the nighttime. They use Juniper Berries, Coriander Seeds, Angelica Root, Orris Root, Olive Leaves, Sage, Pine Nuts, Chamomile, Cacao Beans, Sandalwood, Vanilla and Pink Peppercorn. After the seperate distillations are created, they are blended before being allowed to rest for 24 days before bottling.  The result is an intruiging gin, which is exceptionally well balanced in its flavour profile. On the nose there is an intense and bold hit from the juniper, which is followed by notes of herbs and coriander in particular. On the palate this is smooth, and coats the mouth well - helping impart its flavours. The herbaceous notes found in the aroma come through too with a hint of sweetness. Exceptionally aromatic, the has a long flavour in the mouth, with deep spicy and earthy notes, fresh juniper and lemon and a touch of pine towards the end. More from Imagine Spirits Perfect Serve As a well balanced gin this is exceptionally versatile. It works well in a classic Gin & Tonic, or equally imparts some class into a cocktail. We loved this in a Martini with an olive garnish. For a classic Gin & Tonic take a large glass filled with ice and add 50ml of the gin. After many variations, and critiquing of the reciper, the final blend of botanicals was unanimous. The best juniper berries are distilled in traditional copper stills. They merged a hint of fresh mediterranean notes (lemon, citron, and laurel leaves), which are macerated for up to ten days, with exotic botanicals (kaffir lime leaves, black cardamom and coriander seeds). Combining precisely in the right proportions resulted in what the creators believe is an unparalleled flavour and aroma.  It has a distinct and aromatic intensity on the nose, which is followed with a full-bodied and voluminous feel on the palate. Smooth, and elegant, a gastronimic treat in delivered in an eye catching bottle. Perfect Serve This is a gin which was conceived to explore all its nuances when drinking, so it can easily be enjoyed neat or on the rocks, and works well within a number of cocktails. In a G&T, the fizz enhances the freshness, and we recommend this is enjoyed with a premium tonic. In a tall glass filled with ice, add 50ml of gin gently pour over 100ml of Fentimans Connoisseurs Tonic Water (this is a very neutral tonic, which will really allow the Ginraw to be the hero). Filliers Dry Gin 28 Classic Distilling in small batches, Filliers utilise traditional copper pot stills in the creation of their gin. The distillery itself was established in 1880. The recipe for their Classic gin utilises 28 different botanicals (hence the 28 in the name), and was created in 1928 by Firmin Filliers. Since then, the recipe has been passed down in the family, until, in 2012 it was delicately refined by the Filliers master distillers without compromising the character of the gin. The result is award winning, delicious on its own - and forms the base for their other gins. Whilst the full recipe is a closely guarded secret, some of the botanicals and fresh fruit distillates within the 28 total are known. These are Juniper, hops, angelica root, allspice, fresh oranges, cardamom, ginger, calm sauce, orange blossom, coriander seeds, lemongrass, lavender blossom, gentian root and fresh citrus fruits. The overall result is a deliciously spicy gin with a dry character with spicy notes of pine filled juniper. This is complemented by refreshing citrus aromas. The slightly higher alcohol content than unusual ensures this is a strong & aromatic spirit. Edinburgh Gin 1670 With the natural connection between botany and distilling, this gin is a limited edition collaboration between Edinburgh Gin, and the Royal Botanic Garden in Edinburgh. Inspiration for this gin was taken after the discovery of the "1670 Physic Garden". This was used as a source of botanical inspired medicinal remedies by two Edinburgh doctors, Robert Sibbald and Andrew Balfour. Over a 12 month period, David Wilkinson (Edinburgh Gin's Head distiller) worked with the Royal Botanic Garden's head botanist. The recipe was experimented with, and refined until both were happy.  Many of the botanicals which were finally decided upon would also have been found in the original garden, such as fennel (seeds and leaves) and sweet cicely both quite common, alongside exotic plants such as Piper Leaf, Tasmannia Lanceolata leaf and Tasmanian Mountain Pepper. The result? A contemporary gin which keeps its roots firmly in a fascinating chapter of Edinburgh’s history. Blind Tiger Piper Cubeba Gin Whilst it gives a striking look to the bottle, there is a reason behind the name of Blind Tiger. Another name for a speakeasy, A blind tiger was a hidden bar which served alcohol during the period of prohibition. The door of the place would have the picture of a blind tiger or a blind pig, so those in the know would know where to go! Blind Tiger's Piper Cubeba gin is made in small batches in a "concealed" distillery in the west of Belgium, they macerate and distill the botanicals together before adding double distilled cubeb pepper. Daring and invigorating, this gin has a unique blend of botanicals, which give it a distinct spicy profile from the cubeb pepper, which is joined with hints of citrus from orange. Unusually, they use malted barley in their distillation along with the required juniper. These are joined with corriander seeds, bitter orange peel, orange blossom, ginger, green cardamom, lavender and licorice, angelica and orris root. Finally, a secret Belgian botanical is added. Definitely a spicy gin, with clear citrus notes. The end finish is spicy too, with the piper cubeb (pepper) coming through as well as a warmth from the malted barley and earthy notes from ginger liquorice and cardamom.   Read more about Blind Tiger Perfect Serve Whilst this is really delicious drunk on its own over ice, having it as a gin tonic brings out a slightly different character. Starting with fresh citrus, a velvety heart and a spicy finish, this gin uses distinctive seaweed to uncover a crisp but subtle hint of the sea. The combination of knowledge and effort are what go into creating Poseidon. Over 40 different botanicals and numerous variations, the right combination of was found. They essence of maritime passion was captured, a harmonious balance was struck and Poseidon Gin set foot into the world. Amuerte Coca Leaf Gin - Green Edition The history of the cocaine plant goes back to the Incan Empire, who used the plant in many ways, from fighting hunger, to curing various sicknesses. Whilst travelling, the founders of Amuerte witnesses a local tribe chewiong on cocaine leaves. Trying themselves, they discovered the unique flavour inherent there. Having a history dating back well over 100 years in the making of gin, they utilised the knowledge and experience to create  a gin with passion, One which contained the vivacious coca leaf flavour (which has a similar flavour to green tea) which they blended with other botanicals. With their Green edition (which is a strictly limited edition, and made for the summer), Amuerte have enhanced their signature coca leaf flavour with the Curuba fruit (also known as the banana passionfruit). Native to the Andean valleys (from Bolivia to Venezuela), the banana passionfruit has been cultivated since pre-colombian times by different cultures in the western South American continent. It looks similar to a young unripened banana, but when cut open it has a glistening orange pulp thats studded with numerous black seeds. The flavour is similar to passionfruit (it's from the same plant family), and has a tart and tangy flavour.  A delicious summery edition from Amuerte, this is really fresh with a slight acidity - and is packed full of tropical flavour! Bombay Original London Dry Gin The history behind the Bombay Sapphire brand goes back to 1986 in England, where the gins were distilled in Warrington. However in 2014 their home moved to a dedicated distillery at Laverstock Mill in Hampshire. They distill their gins using vapour infusion. This method suspends the botanicals over the boiling alcohol, and the vapour is infused with the flavours and aromas of the botanicals as it passes over them. This is a more delicate method of distilling, and  results in a  lighter and more floral taste. Two of their four stills (of the carterhead variety, and named Tom and Mary) date back to the 1830's. Whereas their Bombay Sapphire Gin, found in the blue bottles) use 10 different botanicals, their Bombay London Dry Gin uses only 8 carefully selected botanicals.  These are Juniper Berries, Liquorice, Cassia Bark, Coriander Seeds, Angelica Root, Lemon Peel, Orris (Iris) root and Almonds. Their recipe takes inspiration from an original dating back  to 1761. On the nose this has a fresh aroma, with grassy herbal notes, piney juniper and hints of lemon citrus. This leads into a palate which is equally fresh and full of classic dry juniper flavours. These are enhanced by a mild hint of lemon and more herbal notes from coriander. It finishes crisp and clean leaving the palate with pleasant dryness. Tënu Gin - Forest Blend Founded in 2014, Tenu Spirits was created by Chef Antto Melasniemi and Artist Klaus Haapaniemi. They had a shared desire to explore, be excited and ensure quality drinks - and so they decided to create their own drinks brand. The original Tënu Gin was created for a pop-up restaurant in London. After proving hugely succesful, they decided to launch it into the wider market. After much searching, they settled on producing their gin at the Valamo Monastery Distillery. In this location in the eastern of Finland, they have an abundance of crystal clear water, and also lingonberries. These berries are the distinctive ingredient found in the gin, and grow wild in the vicinity of the distillery where they are hand-picked for use. After distillation in an Holstein copper pot still , this gin is allowed to rest for three weeks before being bottled. This ensures a well balanced gin. Whilst they keep the full list of botanicals a secret, it is know to include juniper berries, lingonberries, wild rose petals (sourced from the Finnish archipelago), orris root, coriander seeds and grapefruit peel. This is a gin which truly resonates with the wilderness of Finland. As could be expected from a Forest Blend from Finland, the piney juniper is strong in this gin. Ginger and black pepper offer enticing warming spice flavours, which then melt into an intruiging floral bouquet from lavender and violet. It finishes with the juniper coming through again, joined by a crisp note of citrus and a lingering earthiness. Daffy's Gin Whilst this gin is made in the middle of Scotland (UK), the makers looked the world over for the best ingredients. This was because they wanted to create a gin which was "a gin like no other". They start by using pure wheat grain spirit, which they source from northern France. This is distilled in a single batch copper still, using a manner similar to malt whisky (they do make it in Scotland after all!). The botanicals they chose are a combination of the traditional found in a number of gins (juniper, coriander seeds, angelica root, cassia bark, orange peel and orris root), along with the less known within gin, Lebanese mint, and some rare variety lemons. These carefully selected botanicals are stepped, and then distilled in the base spirit, which creates a complex and exceedingly well balanced gin.  The result is something quite different within the gin world. The addition of the lebanese mint brings a real freshness, and this is joined with other notes from the citrus, along with a hint of toffee and spiced caramel. This is a slightly higher than usual alcohol content for a "non-navy" gin, which created a powerful heart to the gin - and brings the botanical flavours forward. Interesting fact.... the name Daffy comes from a slang term for Gin in Britain during the 1800's. It became so well used, even the famous writer Charles Dickens mentions it. Daffy is also seen as the Goddess of Gin (having been written about in the 1700's). Here it is well rounded, and smooth - with a long finish. However, we prefer this as a longer drink, and like to allow the unique flavours to come out. For a D&T (Daffy's & Tonic), pour 50ml of the gin into a large glass filled with ice, and top up with 150 - 200ml of neutral tonic (we find Double Dutch Indian Tonic works well, but any neutral tonic should be fine). Garnish with a slice of lime, and a sprig of mint.

Martin Miller's Gin This is a gin which is the creation of three friends (David Bromige, Andreas Versteegh and Martin Miller). Martin Miller wanted a gin which would enliven a category which he felt to be neglected. The through came in 1998, and the gin was launched in 1999. A modern take on a classic dry gin, Martin Miller's uses the best traditions of English distillers. However, they add their own twist to it. They wanted a gin that ‘tasted of gin’ in the words of Martin Miller. This is a pot distilled gin, which uses two separate distillations of earthy and citrus based botanicals. This imparts a perfect balance between citrus and juniper. The botanicals used with the gin are juniper, angelica, dried lemon peel, cassia, coriander seeds, dried lime peel, liquorice root, nutmeg, bitter orange peel and florentine iris. Once the distillation of these botanicals is complete, the distillate is shipped to Iceland. It is here that it is blended to strength using Icelandic spring water. This water is renowned for its purity, resulting in no artificial demineralisation needed which further enhances the gentle bouquet and trademark sensation. The result of the whole process is a gin which is smooth and citrus. It has an excellent balance where, like a "classic gin" juniper is dominant. Yet it has a citrus freshness which shines through. A gin that "tastes of gin" as the distiller says. Overall, Martin Miller's gin has a junipery pine aroma, which merges perfectly with fresh lemon peel. In the background theres a delicate pepperiness. On the palate there is a very delicate liquorice sweetness, which works perfectly with the citrus which is forward on the taste, along with gentle spice notes. It's soft and delicate, and extremely smooth in the mouth. The finish is warming, very smooth, with lemon lingering. In the words of the distiller: "Unconventional English Distillation of the finest botanicals, blended with the purest Icelandic water. After proving hugely succesful, they decided to launch it into the wider market. Like a lot of great things, the birth of Le Bon Tikka gin started by accident. During the creation of a test batches of Tënu Gin, Bilberries were substituted for the usual lingonberries. Initially this was too heavy and not found to be acceptable on the palate. However, it did bear some promise - so it was decided to allow it to age in new oak barrels for a period of 6 months. They tried a number of different barrels, and the results varied. Some too vanilla, some far too woody. However, upon blended they found a perfect mix - and Le Bon Tikka was born! Only 1800 bottles of this have been created - so a definite limited edition! Fun fact: Tikka means woodpecker in Finnish - hence the name! It can also be found on the label along with the bilberries. Whilst they keep the full list of botanicals a secret, it is know to include juniper berries, bilberries (only wild, handpicked Finnish ones), wild rose petals (sourced from the Finnish archipelago), orris root, coriander seeds and lemon peel. With a stronger abv this is a gin which is truly packed full of flavour. There is a lot of woody juniper in this, which is joined by oaky spice and hints of sweet stem ginger. A sweet caramel also comes through which evolves in the mouth to floral lavender, warm vanilla and interestingly a clean citrus finish. More from Tënu Spirits Perfect Serve According to the creators, Le Bon Tikka can be enjoyed neat or with ice.However, if you're not so keen on such strong spirits enjoyed neat it also makes an absolutely delicious gin & tonic. Try this with Thomas Henry Tonic Water. Take a large glass filled with ice and add 50ml of the gin. Gently pour over 150ml of the tonic and stir gently. Garnish with a slice of lemon.
