Teeling Small Batch Whiskey With a family history in distilling which dates back to Walter Teeling in 1782, it was no surprise when Jack and Stephen Teeling opened a distillery in Dublin in 2015. In fact, the Teeling Distillery is now the first new distillery in Dublin for over 125 years. They wanted to create a contemporary brand, which, whilst looking to the future they ensure to keep an eye on the past. In this way, they can appeal to the modern whiskey drinker, whilst ensuring traditions are honoured. For their small batch whiskey, their unconventional approach ensures a whiskey which is full of natural character. Whilst this is undoubtedly an Irish whiskey, they have challenged what this means. It has distinct layers of flavour which are a result of their unconventional cask maturation process. Using ex-bourbon barrels, they age grain and malt whiskies. This process imparts delicious vanilla and oak notes to the whiskey. Once completed, they blend these (3:1 grain to malt) and age further, this time in Central American Rum casks. . This process lasts for up to 12 months, giving the whiskey a distinct, and unique, dried fruit profile. The result of this process is something quite different. The nose is inviting, with vanilla and spice merging perfectly with bright sweet notes of Rum. On the palate there is a solid influence from the resting in rum barrels. This creates a smooth, sweet and slightly woody flavour. Further influence from the rum shows with fruit notes coming through, with a sweet spicy finish which is complimented by a lingering woody undertone. We love this in an Apple of my Eye cocktail, which works particularly well in the autumn / winter. Add 35ml of the whiskey, 25ml of apple juice, 5ml of honey and 5ml mixed spice (apple pie spices!) to a cocktail shaker filled with ice, and shake until chilled. The Glenlivet Founders Reserve Whisky For their Founders Reserve, The Glenlivet have created an expression which is a tribute to George Smith, their founder. This has all the classic flavours of The Glenlivet, but is a a smooth creamier expression. They have utilised the time-honoured distillation methods which George Smith used, as well as the same mountain stream water.  This is then matured in traditional oak casks. When George Smith created his blends, there were no age-statements on whisky's. Instead he utilised his freedom in selecting and blending, and with this expression The Glenlivet have done the same - selecting whisky from traditional ages oak casks from a range of ages. To give a modern twist, their Mast Distiller (Alan Winchester) then marries a selection of the aged oak casks and American first-fill oak casks. These first-fill oak casks haven't been used to mature whisky, and when used selectively provide a smooth, creamy sweetness. This intermingles perfectly with the delicate flavours and fruity tonies already in the whisky.  The result is a whisky that The Glenlivet believe their founder would approve of. It has a pale gold colour, which gives an aroma full of sweet citrus fruits, with orange being predominant. In the mouth the orange again comes through, with a zestiness which is complimented by pear flavours and a touch of toffee apples. The flavours give a delicious blend of creamy sweetness and a refreshing zestiness from the citrus. The finish is pleasantly long, very smooth and creamy right to the end. In a cocktail shaker filled with ice add 50ml of the whisky, 5 - 6 fresh raspberries, 15ml lemon juice, 5ml of white balsamic vinegar and 15ml of sugar syrup. Shake vigorously, then strain over crushed ice in a highball glass. Garnish with fresh raspberries, and a twist of black pepper.

Havana Club Añejo 3 Años Rum Havana Club hails from Cuba and is a representation of the island’s rich heritage. Rum is an essential part of the Cuban culture and the Maestros del Ron Cubano make Havana Club following traditional Cuban rum making methods. An aspiring Maetro will spend 15 years training under the supervision of the senior Maestro del Ron Cubano to become a true master of their craft. Its not something you can learn from books, it's ‘’a cultural heritage, passed on from Maestro to Maestro’’ Havana Club use what nature gave to Cuba, ‘the isle of rum’. The rich sugar cane, fertile soil and the tropical climate is what makes their rum so special, and what makes it difficult to replicate the distinctive taste outside of Cuba. Havana Club Añejo 3 Años rum is a white rum that has been aged for three years, giving a pale, golden straw like colour. On the nose, there is a full bouquet of smooth aromas, with delicious hints of sugar cane, molasses and oak. This well balanced and complex rum has a freshness from the continuous distillation process and character from the ageing process. It has a mild, slightly sweet, fruity taste with a light hint of citrus. More from Havana Club Perfect Serve Can be served with cola or perfect for making authentic Cuban cocktails. For a classic mojito, add 2 teaspoons of white sugar and 25ml fresh lime juice to a tall glass. ‘Muddle’ a few mint leaves in the glass and add 50ml Havana Club Añejo 3 Años rum and some ice cubes. Mix with a barspoon and top up with soda water. Add a sprig of mint to garnish. Or how about a Frozen Banana Daiquiri? Diplomatico Reserva Exclusiva Rum Diplomático's distillery is situated at the base of the Andes Mountains in Venezuela. They were originally established in 1959 and have been family owned and operated since 2002. They distil using a variety of different methods, depending on the rum (continuous column stills for light rums, batch kettle for intermediate and pot stills for their complex rums). These different methods help ensure each of Diplomático's rums has a defining character and profile. This is further enhanced by their aging process, which depending on the rum uses different casks.  After the distillation and ageing, the real skill comes into play when Tito Cordero (the distillery's Maestro Ronero - or Rum Master) and his team combine these matured spirits to create complex rums. It is the Maestro's responsibility to supervise and ensure rums that capture the best balance and roundness of flavours and aromas are created. To create their Reserva Exclusiva Rum, Diplomático creates a blend of exclusive rums which have been aged for up to 12 years (good things don't come quickly!). This is a molasses based rum which uses the copper pot stills and is matured in whiskey barrels, all of which give it its unique and delicious flavours - and ensured it has won many awards. On the nose it opens with notes of orange peel, toffee and licorice. There is also an almost gingerbread quality to it as well. On the palate there is a distinct smoothness, and the toffee again comes through, this time joined with cocoa and vanilla. Rich plum flavours are joined with a little spiced oak, and a hint of pepper. The finish is long and lingers perfectly, leaving a hint of sweet coffee and a hint of oak.
